I am going to make breakfast my potato dish today. Gonna do poached eggs with diced potatoes. Anyone gonna join me?

It is so easy, here is how…
Dice your spuds into little pieces (size of a dice), throw some olive oil on them, a little bit of rock salt and bung them in the oven for 25 minutes.
Just before you get them out, fry or poach two eggs.
When the spuds are nice and crispy, take them out, put them on a plate and chuck the eggs on top.
If you wanna jazz things up add some Tobasco or any other hot sauce.
Don’t mind if I do!!
